Leek Sauce

slice and wash 1 leek
sauté in butter until soft and glossy
 add 1 tab tomato sauce (see previous recipe)
serve on sausages and fried potatoes

Chocolate coconut slice

melt 1 tab jam, 100g butter in a saucepan
add 1/2 cup castor sugar, 2 eggs, 1 cup ricotta, 3/4 cup coconut and 1 cup SRF
pour into square lined pan
bake in slow oven until the middle springs back (about 40 minutes)
serve warm

Tomato 'Sauce'

in a small saucepan, simmer for 2 hours 
1/2 cup water
4 tomatoes
1/2 punnet cherry tomatoes
2/3 cup home made mint sauce
1/2 tab Splenda or similar
1 chopped onion
salt
pepper
Remove tomato skins
serve as an accompaniment to meat 

Brownie

Ingredients

1 tab fig jam
1 tab strawberry jam
125g butter
(melt and mix in saucepan over low heat)
add 200g grated dark chocolate
2/3 cup cream
1/2 cup Splenda
and 1/2 cup berry Special K
Add 4 eggs (lightly mixed) and 1 cup sifted SRF
Bake in a lined dish until cooked through in a slow oven.
When cooked lightly dust with icing sugar and cut when cold.

Ricotta Hotcake

Ingredients
1 cup plain flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup vanilla yoghurt
3/4 cup milk
3 eggs
3 dessert spoons caster sugar
Add wet to dry.
Cook in a skillet, turning when each side is golden brown.

Serve with Ricotta Cheese and berry syrup.
