Pastry

Pastry cases allow for a variety of fillings. These two examples are Lemon Cheese and Caramel. 
I used the Kitchen Whizz to incorporate butter and a small amount of chilled water until just coming together.
Roll as thinly as possible and bake in mini muffin pans. Bake until light brown.
The caramel is the good old fashioned boil the can of condensed milk in the pot of water for 3 hours.
The Lemon Cheese was made from my own home-grown lemons, eggs and sugar and water.
