Base
180g shortbread Biscuits crushed (mortar and pestle)
50g melted butter
Mix together and press into a lightly greased flan tin
refrigerate while getting the rest ready
Filling
stir together 1 tub mascapone cheese, 1 tab icing sugar mixture, 1/2 tsp vanilla essence
spread over biscuit layer
refrigerate for and hour or more
serve with fresh fruit and ice cream
