Cupcakes


 begin with a plain buttercake recipe
125g butter
1/2 cup caster sugar
1 tsp vanilla essence
cream together
add 2 eggs
then add 1/2 cup low fat milk
stir in 1 1/2 cups SRF
Spoon into patty cake paper line tin or mini muffin tins.
Bake for 20 minutes or until golden brown and firm to  the touch.
Cool and hollow out to receive jam and cream. 
 Arrange 'ears' and dust.
 Or you may like to ice and decorate with chocolate shards.
