Caramelised Onion Relish
Ingredients:- 5 onions
- 1/3 cup Balsamic vinegar (or a little more if you like)
- 1/4 cup olive oil
- 1 heaped teaspoon seeded mustard
- 1/2 tsp Pink Himalayan rock salt (or ordinary salt if you prefer)
- 5 cloves
- a little cornflour for thickening
Method:
- Fry sliced onions in oil for 5 minutes
- Add mustard, salt and cloves
- Sautee for 20 minutes
- Remove cloves
- Add Balsamic vinegar with a little cornflour mixed in (1/2 - 1 tsp)
- Stir off heat for a minute or two until mixture thickens and goes glossy
- Place in a sterilised jar for storage
Pink Himalayan rock salt??? never heard of it! Is it any different than ordinary salt?
