Cream of Celery Soup

Cream of Celery Soup

Ingredients
  • 8 sticks of celery
  • 2 onions - sliced
  • 40g butter
  • 3 medium washed potatoes
  • 500ml water
  • 1 tsp vegetable stock powder (or more to taste)
  • salt, pepper
  • 1 tin evaporated milk 
 Method:
Saute celery and onions in butter for about 10 minutes


Then add potatoes, salt, pepper and vegetable stock and water and simmer for an hour.


Puree or push through sieve.
Add milk, adjust seasoning and reheat.
Serve with grated cheese and parsley.
